1st BASIC COMMERCIAL BAKING COURSE - ILOILO
Philippine Foremost
Milling Corporation successfully ended its 1st Basic Commercial
Baking Course in Iloilo last
June 24, 2010. The 24-day training was been originally conducted in Iloilo until it
was transferred in Manila last 2007. The Iloilo has its
new technical centre which can cater a maximum of 16 participants every batch.
With its latest and brand new equipments, commercial baking course students can
learn the theories and practical applications which are related to baking.
On its 1st
Batch, the proofers made history to be the pioneer of the Basic Commercial
Baking Course on its new curriculum that are based and adapted to AIB
training, the difference is that, we always made it applicable in Philippine
setting.
Students,
continue
to learn the likes of bakery mathematics, ingredients functionality,
and baking science for them to be technically competent in baking.
The students also
battles out for the outstanding bread and cake formulation, wherein
they can
formulate their own recipe and widen their imagination.
It was Aurelio Villanueva in the end, who
received the outstanding student performance award and landed 1st
honor, followed by Allan Laczi who received the 2nd honor award and
closely in the 3rd place is Cherryl Soria.

CIABATTA ESCAPADE INVADES ILOILO

Philippine Foremost Milling Corporation together with
Philippine Society of Baking conducted a demonstration on ciabatta making at
the Philippine Foremost Technical Centre in Iloilo last
June 5, 2010. Spearheaded by the PSB
President and PFMC national technical manager and with the support of his
members namely, Bien Enrico Ah, Christopher Ong, Jonathan Cabiles, Wilfredo
Capule, Manuel Bien Pine,Ninoh Jallores, Mar Marante, Arvin Chua and Boy Ng,
the program was indeed successful which was participated by the customers from
the Panay region.
The seminars’ aim is to educate more those traditional
bakers that might able to use new recipes and techniques in the baking process.
A total of 38 participants were present during the said seminar.

PFMC - Iloilo Technical Center Inaugurated
In its policy to
advanced the industry standard through education. Philippine Foremost Milling
Corporation inaugurated its newly built technical training centre last June 5,
2010 in Iloilo city,
the first flour milling corporation who has 2 technical centre, which finally
can cater loyal partners and customers who wanted to expand their knowledge in
the baking fields.
With the presence of
Representative Jerry Trenas and Iloilo city Mayor Jed Mabilog, Mr. Shane
Townsend of the US wheat associates, the people of DTI and TESDA, Dealers and
loyal customers, and of course the staff and management of PFMC, the
inauguration was a huge success and made history once again
As the Iloilo Training center is open, the
support for customers who need technical services is now at hands and
reachable, after all we need constant learning which can be useful to the
improvement of the bakeries to compete
with.

2010 Flour Laboratory Analysis Seminar conducted


Philippine Foremost
Milling Corporation – Manila
conducted a 2 day seminar last July
8-9, 2010 regarding Flour Laboratory Analysis Seminar which
concentrates on the technicalities of the flour produced and the basic of wheat
milling.
The seminar was
given by the Quality Assurance Supervisor Engr. Bienvenido Mallari and aided by
the technical sales department.16 participants were present and most of them
came from the Quality Assurance and Research & Development Departments of
their respective companies. Attendees of the seminar were represented by
Goldilocks Bakeshop Incorporated, Red Ribbon Bakeshop, Republic Biscuit
Corporation, New Food Coatings and Zenith Foods Corporation(Jollibee).
The program was not
possible without the effort of PFMC-TSD National
Technical Sales Manager Mr. Alejandro T. Paez.

9th BCBC : Delidders

As it continues to serve
its clients
with training and education, The Philippine Foremost Milling
Corporation recently concluded its 9th Basic
Commercial
Baking Course last March 10, 2010.
The 26-day training which
started last
February 08, 2010 were composed of 22 students from different
companies and industrial partners. They have been rigidly trained on
bakery math, bakery management and production, dough doctoring and
cake/bread formulation. The said training also, has been a venue for
the participants to widen their horizon on the baking industry, plant
tours and actual demonstrations were employed for them to get a
clearer picture of what is happening over the operations.
The 9th
BCBC batch was named
after a machine called “Delidder” and eventually
translated it to
THE LEADER in COMMERCIAL BAKING COURSE. They are indeed the leader in
commercial baking course by breaking all the records in terms of
academic performance. Majority of the students made a final grade
above 90 %, an estimated class average mean of 89 % and the highest
ever grade to be given to the topnotcher of the class rating 98.41 %
to outsmart all other batches.
Receiving the 1st honor
award, was Arvin Jay B. Damian of the R & D department of
Gardenia Bakeries Philippines (98.41 %), followed closely by the 2nd
honor which was shared by two individuals namely, Rowena A. Buenaflor
of the Production department of Gardenia Bakeries Philippines and
Noridel Paul N. Alpapara of Zenith Foods Corporation both with an
average grade of 96.02. And lastly, 3rd Honor
was bagged
by Margarita G. Casapao of the Quality Assurance Department of
Gardenia Bakeries Philippines.
Meanwhile, Ms. Mariebelle Reconalla of
Julies Franchise Corporation gave here inspirational message the
graduate as the 6th BCBC class valedictorian and
an alumna

PFMC : STEAMED BUNS SEMINAR 2010

Recently concluded last
February 27,
2010, the steamed buns seminar sponsored by PFMC was again a
successful event to open the year.
Together with the expert in
Steamed
Buns production, Mr. Plutarco “Boy” Ng of the US
wheat associates, the participants was able to grasp different types of
steamed breads and their origin, a little of the technical
specifications of the flour to be best used in steamed breads, and
actual workshop regarding on steamed bread making.
With 24 participants,
indeed, the event
made the whole Saturday informative and fun with giving of lecture,
discussions and forums.

Certified
Philippine Foremost Milling Corporation, one of the major
flour
producers in the Philippines and pioneer in flour innovation is now
recognized by the ISO and awarded the ISO 22000 certificate. This
highly prestigious certification is a milestone since PFMC is the first
to be awarded in the Philippine flour milling industry.
ISO 22000 is an international standard that define the requirements for

7th BCBC; the Egg Beaters
The
Philippine Foremost Milling Corporation once again produced 20
graduates of its Basic Commercial Baking Course now
on its 7th batch. Spearheaded by the National
Technical Sales Manager, Mr. Alejandro T. Paez,
the month long baking class that started May 4, 2009 and concluded last
June 4, 2009 have been a life experience journey of learning on the
field of baking and at the same time building bonds to its fellow
classmates. The eggbeaters simultaneously became a TESDA NC II
competent as they took the exam as part of the curriculum of PFMC-BCBC.
The 20 participants gave their bests and completed the coveted TESDA
certificate with flying colours.
As the 7th season ends, a new chapter
of the PFMC’s BCBC will start soon as the 8th
batch will be coming this September.

QC/R&D,Tech. Sales and Admin
Summer Outing; Invades PUERTO GALERA!!!
In
tradition of the Philippine Foremost Milling Corporation in promoting
leisure and recreation to its employees, the QC,/R&D, Tech
Sales
and Admin departments joined forces and invades Puerto Galera, Oriental
Mindoro last April 30-May 1, 2009. The said event was full of
activities and really gives break and relaxation to the pressures of
their different works in their respective department. The combined
initiatives of the three department heads made it possible namely, Ms.
Ana Victoria Alvarez – QA, Engr. Renato Tabuena –
Admin and
Mr, Alejandro T, Paez – Tech. Sales. Of course the
cooperation of
the people on the said departments were very phenomenal since
everything was really working hard to make the said outing a memorable
and successful one. The group enjoyed the scenic beauty of Puerto
Galera and the nature trips of the natural wonders the Oriental Mindoro
can offer. The group were very energetic and it enthusiastic of the
outing for at least a day gives them a chance to be away to the toxic
city environment and take breath to the crisp fresh air of the

PFMC attends BSTC 31 @ UFM Bangkok, Thailand
The
Philippine Foremost Milling Corporation sends in a participant to the 31stBSTC
at UFM Baking & Cooking School in Bangkok, Thailand.
The 6 weeks baking training course were conducted by UFM and in
partnership of US Wheat Associates, Singapore.
Karlo Jabe Vicente, of the technical sales department made some
accomplishments in the said training course as it involves some
competition in cake formulation , bread formulation and dough
doctoring. The following recognition were the following;
1st place: Cake Formulation Low Ratio
Batter Type Cakes; Aloha Carrot Cake
2nd place: Cake Formulation High Ratio
Batter Type Cakes; Moist Chocolate Cake
Highly Commended; Bread Formulation; Nori Japanese Salad Bread
with Wasabi. Winner of 2 Categories in Dough Doctoring.
The training started last April 27 and ended June 5, 2009 was
a
showcase of new technology in baking and new techniques in bread
making. 30 participants from 5 countries such as, Malaysia, Singapore,
Indonesia, Thailand and the Philippines. With the help of the experts
from US wheat,
Mr. Roy Chung and from UFM Ms. Jiraporn Boonpayotche made the training
a tough but very fun. The course also includes discussions on

Star Proofers: The 6thBatch of PFMC
basic commercial baking course
It
started last February 2, 2009 by which 20 different people gathers up
for the PFMC 6th
basic baking commercial course. This 20 day training is served to widen
the knowledge of every participant on the technical sides of bread and
cake making, as they say “this is not just an ordinary baking
school”, since it entails basic knowledge in mathematics,
chemistry and even physics. Alas they graduated last March 4, 2009 with
the promise to fulfil their mission in the fields of baking.
The month long basic baking class were represented by people
coming
from different regions of the country represented baking class, some is
as near as Binondo and other is as far as General Santos City.
Furthermore, this baking class will continue its purpose to be the
source of knowledge and technical curriculum which will be helpful for
the participants batch by batch.

Manila Sales Team First To Be TESDA Certified
Technical
sales personnel from Luzon Sales Department were the first flourmill
sales people to receive an accreditation from Technical
Education and Skills Development Authority (TESDA) in the
field of Baking and Pastry production.
The National Certification II (NCII) was
awarded last
December 1, 2008 in FilChi Baking Centre, Tayuman, Manila after the
exhausting and stressful 8 hour assessment conducted by the equally
trained, Mrs. Chato Manreza, under the supervision of the TESDA
representative.
Now NCII certified are as follows: Mr. Paul Vincent Reyes, Mr.
Francis Reyes, Ms. Kristine Mateo, Ms. Mary Anne Ferrer, Mr. Geofrey
Sumague, Mr. Joel Ferrer, Mr. Jomar Calumag, Mr. Regie Pasulot and Mr.
Alejandro Paez (Tech. Sales Supervisor). Included also was Mr. Roc
Canares, PFMC R and D Senior Specialist. Soon to be accredited are the
Visayas Mindanao Tech. Sales Personnel.
This achievement was one of the many productive outputs of the
team
as a result of their intensive trainings both locally and
internationally. Their team is continuously striving to look for ways
to provide their valuable customers with more than quality products but
quality and highly recommended services.

Out of School Youths Turned Professional Bakers
Out of School
Youths (OSY) from Makati City have recently completed a two week baking
course titled “Tinapay ng Bayan Training Program”
held in Philippine Foremost Milling Corporation (PFMC) Technical
Centre, Tondo, Manila.
The training which started last June 30 up to July 11, 2008
ended
with a commencement exercise and signing of Memorandum of Agreement
(MOA) between representatives from Department of Social Welfare and
Development (DSWD), Department of Trade and Industry (DTI), Philippine
Association of Flour Millers (PAFMIL) and Chamber of Philippine Flour
Millers (CHAMPFLOUR).
Kimberly Ann Rita, president of the OSY Makati Batch and an
active
member of Pagasa Youth Association of the Philippines (PYAP), stressed
during her speech “ Ngayon hindi lang kami kumakain
ng tinapay, marunong na kami gumawa at magbenta ng tinapay
(Today, we do no only eat bread but we know how to make and sell
breads).
The “Tinapay ng Bayan”
is a 10 day program
composed of lectures and actual hands-on on how to make scrumptious
breads to mouthwatering pizzas to sweet tooth craving cakes. The

Batch 4 of BCBC TESDA NCII Certified
Participants of 4th Basic Commercial Baking
Course last June 2 – 27, 2008 have successfully passed the National
Certification II (NCII) in Baking / Pastry Production last
June 30 and July 1, 2008. The assessment was conducted by Ms.
Virgie Diaz in FilChi Baking Center in Tayuman, Manila.
NCII is a certification awarded by the Technical Education and
Skills Development Authority (TESDA) to bakers who have qualified and
passed their examination.
Now recognized as “Professional BAKERS”,
participants
reminisced the heart pounding and mind cracking 8 hour actual baking
and oral questioning. “Nakakatense” quoted by one
of the
participants whose hands are still cold as ice despite several years of
experience as baker. Their hard work, during their training in
Philippine Foremost Milling Corporation (PFMC), have truly paid off
after they received their long awaited certifications.
PFMC is conducting a 20-day basic baking training class open
to all
bakers and bakery enthusiasts. The training consists of lecture and
actual hands on in making breads, pizzas, cakes and other mouth
watering baked products.

Feeds, Magaling at Maasahan” last December
14-15 2009
at Orchard Valley Resort in Concepcion, Tarlac. A total of
twenty one (21) SPR
from our feed distributors all over Luzon
participate in the event.
Seminar
Workshop was
conducted to train our SPR’s
on how to present
company/product presentation and Hog Raising seminar in their
respective area
of assignment. Updates on swine, ducks, quails and broiler health
management
were also discussed. This will increase the technical knowledge of our
company
and distributors sales force.
